Meal for Friends

Last weekend I made a meal for some friends that just had a baby.  How I hurried to get this special meal together.  I hurried because there was a baby to hold!!

You may remember this post regarding lunch with a friend.  I wanted this meal to be fun and easy for the New-Baby-Family.  The final menu played out like this:

LITTLE CHEDDAR MEAT LOAVES
1 egg
1 cup milk
1 cup shredded cheddar cheese









1/2 cup oatmeal
1/2 cup chopped onion
1 t. salt
1 pound hamburger

Now for the fun...mix all of the ingredients...WITH YOUR HANDS!
Squish it between your fingers to mix well.
Cover a baking sheet with aluminum foil and spray with cooking spray.
Preheat oven to 350 degrees. 
Heap hamburger mixture into a 1/2 cup measuring cup
and drop onto the sprayed baking sheet.

Combine 2/3 cup ketchup, 1/2 cup brown sugar, and 1 1/2 t. yellow mustard for the topping.





With the back of a spoon, make an indentation into each meat loaf.
Fill each indentation with the filling.
Bake for 50 minutes.
TWICE BAKED POTATOES
Scrub the outside of 6 baking potatoes
Pierce the potatoes and bake 1 hour at 350 degrees.

Split the warm potato and scooped the inside into a bowl.
After all potatoes are "scooped", mash the
potatoes with warm milk, cheddar cheese, salt and pepper.
Fill each potato shell with the mashed mixture
Bake potatoes in a 400 degree oven for 20 minutes

BROWNIES

All food was delivered in disposable containers so no dishes
needed to be washed and returned.
The best part of the meal was Baby Naomi that I got to
hold while Dad and Mom enjoyed a hot meal!
